Description

Easy potato soup with carrots, onion and garlic. Flavorful and filling. Great with grilled cheese sandwiches.

Ingredients

  • 5 whole Russet Or Red Potatoes, Peeled And Diced
  • 3 whole Carrots, Peeled And Diced
  • 1 whole Medium Onion, Diced
  • 1 clove Garlic, Diced
  • 3 Tablespoons Butter Or Margarine
  • 2 Tablespoons Self-Rising Flour
  • 2 cans (14 Oz. Can) Chicken Broth
  • 1 cup Milk
  • 1 teaspoon Salt And Pepper, Or To Taste

Preparation

Peel and dice potatoes and carrots. Dice onions and garlic.

Boil potatoes and carrots until soft, drain and set aside.

Melt butter in a large pot on medium high heat. Add onions and cook 5 minutes or until soft and slightly brown. Add garlic and cook another minute. Add flour and whisk until slightly brown and thickened. Add chicken broth and whisk until combined and starting to thicken, about 2-3 minutes. Add milk, potatoes, carrots, salt and pepper. Add water, milk or more chicken broth if soup is too thick. Reduce heat and simmer 10 minutes uncovered. Serve with grilled cheese sandwiches or corn bread.

Makes wonderful leftovers!

This recipe is really simple and can be made with stuff I already had in my crisper. The onion, garlic, and black pepper gave it plenty of flavor- it was definitely not bland! I also pureed this in my blender after to make it really creamy and smooth. It has a slight orange tint to it because of the carrots, but it was really good. I’m freezing a couple of single servings to enjoy later!
