Description

Like a deconstructed lasagna—tastes just like lasagna! But it’s a soup.

Ingredients

  • 3 Tablespoons Salted Butter, Divided
  • 1 teaspoon Vegetable Oil
  • ½  Purple Onion, Diced
  • 1 Tablespoon Garlic, Minced
  • 1 pound Ground Sirloin
  • 2 Tablespoons Beef Broth Bouillon
  • ½ teaspoons Pepper
  • 2  Cheddar Smoked Sausages, Diced
  • 2 cups Beef Broth
  • ½ cups Tomato Pasta Sauce
  • 3 cups Pasta, Cooked
  • 2 Tablespoons Basil Leaves, Crushed
  • 2 Tablespoons Bay Leaves, Crushed
  • 16 ounces, weight Cottage Cheese Large Curd
  • ½ teaspoons Kosher Salt
  • 1 cup Mozzarella Cheese, Shredded

Preparation

1. Melt 2 tablespoons butter in a little vegetable oil.
2. Add the diced onion. Stir for 3 minutes.
3. Add garlic. Stir for 2 minutes.
4. Add ground beef. Stir and add beef bouillon and pepper. Stir.
5. Add diced sausage, beef broth and tomato sauce.
6. Stir until it simmers. Add the remaining 1 tablespoon butter. Cover for 10 minutes.
7. Add cooked pasta.
8. Stir and let it simmer covered for 3 minutes.
9. Add the herbs.
10. Stir and cover for 5 minutes.
11. Drain cottage cheese and add to the soup.
12. Stir and cover for another 4 minutes.
13. Season to taste with salt. Top with mozzarella cheese.
14. Cover, remove from heat, and let it sit for 5 minutes.

This is a tasty dish, but mine couldn’t be called soup. It came out more like a casserole without any extra broth or liquid. I followed the recipe exactly, precooking the pasta, etc.

Suggest you do ALL of your chopping, draining, measuring ahead of time. The few minutes of extra simmering while I drained the cottage cheese, chopped the sausage are probably what made mine less like soup.
