Description

On a hot summer day, this creamy, rich and tangy soup will hit the spot.

Ingredients

  • ½ whole Lime, Zest Only
  • 2 whole Limes, Juice Only
  • 1 whole Cucumber Peeled And Seeded, Roughly Chopped
  • ½ whole Avocado, Peeled And Roughly Chopped
  • ½ teaspoons Salt
  • Creme Fraiche (optional)

Preparation

Blend everything together until totally creamy and smooth. I added a dollop of creme fraiche just to add a little creaminess, but you’re totally welcome to leave it out.

This soup is pretty good as is, but I felt it was a little plain for my tastes. I ended up adding in some cilantro and black pepper. This is really good though, and so quick and easy to make.
