Description

A simple yet hearty soup for two that is ready and waiting for you to get home!

Ingredients

  • 2-½ cups Broth, Chicken, Beef Or Vegetable
  • ½ cups Cooked And Shredded Chicken Or Cooked Sausage (optional)
  • ½ cups Canned Diced Tomato, Undrained
  • ¼ cups Lentils, Washed And Drained
  • ¼ cups Carrot Slices, Fresh Or Frozen
  • ¼ cups Green Beans, 1" Pieces Frozen Or Fresh
  • ¼ cups FFrozen Spinach, Thawed And Squeezed Dry
  • 1 dash Cayenne Pepper

Preparation

Toss all the ingredients in the crockpot, season to your taste. Turn on the lowest heat selection and let cook for 6 hours.

Serve with warm crusty bread.

Notes:
1. Depending on the size of your little crockpot, you may have to adjust the amounts so it doesn’t cook over while you are away. I always set my crockpot on a plate before I add anything to it.
2. I wouldn’t do this on a day that you wouldn’t get home longer than 6 hours.
3. You can adjust the amount of lentils. If you prefer more lentils you may need to use an additional 1/2 cup or so of broth.
4. I’ve also added frozen corn to this recipe, about 1/4 cup.
5. If you decide to add meat, I really suggest already cooked meat. I don’t like adding the raw meat to the veggies, I’m just kinda funny about meat that way!
