Description

Try this delicious easy-to-make Crockpot Chicken and Chickpea Stew with Tomatoes!

Ingredients

  • 6 pieces Seasoned And Browned Chicken Thighs
  • 1 whole Small Diced Small Yellow Onion
  • 2 pieces Seasoned And Browned Split Chicken Breasts
  • 6 cloves Finely Minced Garlic
  • 2 whole Small Diced Serrano Peppers
  • 28 ounces, weight Canned Fire Roasted Tomatoes And Juice
  • 56 ounces, weight Canned Chickpeas, Strained And Rinsed
  • 4 cups Chicken Stock
  • 2 Tablespoons Ground Cumin
  • Koser Salt And Fresh Cracked Pepper To Taste
  • Fresh Chopped Oregano And Basil For Garnish

Preparation

Place all ingredients but the salt, pepper and herbs in a slow cooker on low heat for 6 hours.

Before serving, season with salt and pepper. Serve with fresh herbs.
