Description

Incredibly easy, body-warming soup for days when you just need dinner to make itself.

Ingredients

  • 1 box (about 5 Oz. Box) Au Gratin Potatoes (with Seasoning Packet)
  • 2 stalks Celery, Diced
  • ½ cups Finely Minced Onion
  • 1 cup Diced Precooked Ham (I Have Used Everything From Lunchmeat To The Prediced Stuff In The Meat Section To Leftovers. It's All Good!)
  • 4 cups Chicken Broth
  • 1 dash Black Pepper
  • ⅓ cups Flour
  • 2 cups Half And Half (the Fat Free Stuff Works Really Well)
  • 3 drops Tabasco Sauce (per Bowl, Optional)

Preparation

Combine the uncooked potatoes, seasoning packet, celery, onion, ham, chicken broth, and pepper in your crock pot. Cook on low for about 5 hours (or on high for about 3 hours). There is some flexibility here, you just need to make sure the potatoes are soft. Whisk the four and the half-and-half together in a bowl and add to the crock pot. Cook an additional 30 minutes on high, stirring occasionally.

I love to add Tabasco sauce to my bowl of soup. It gives it a really subtle hint of heat. But I don’t add it to the entire batch of soup because my kids are pretty plain jane.

This is fantastic served with grilled cheese sandwiches.

You can also use a box of scalloped potatoes instead of the au gratin. Use whatever you have on hand!

A family favorite! Perfect for busy Saturday’s… I add a finely chopped potato or two and some carrots, but excellent just as written too.

Loved it! I added some extra potatoes at the end (that I quickly fried in a skillet for a couple minutes) and sprinkled cheddar on top, as we had company. No left overs! :)

This was a yummy easy recipe to use up the leftover Easter ham! We had some baked potatoes lying around as well so I chopped those up into chunks and added them in at the end since my husband likes chunky soup. Definitely a keeper, thank you!
