Description

Smooth and flavorful. The dumplings add an extra treat.

Ingredients

  • FOR THE SOUP:
  • 2 Tablespoons Chopped Onion
  • 2 Tablespoons Butter
  • 3 Tablespoons Flour
  • 2 teaspoons Sugar (I Use Demerara)
  • 1 teaspoon Salt
  • ⅛ teaspoons Pepper
  • 1 dash Each Garlic, Basil, Oregano, And Thyme
  • 1 cup Tomato Juice
  • 1 cup Diced Tomatoes
  • 2 cups Cold Milk
  • FOR THE DOODLES:
  • 2 whole Eggs
  • 1 teaspoon Salt
  • 2 Tablespoons Water
  • ¾ cups Flour, Or As Much As Needed To Make A Very Thick Batter

Preparation

Sauté onions in butter. Blend in the flour, sugar, salt, pepper and other seasonings.

Remove from the heat and gradually stir in the tomato juice. Return to heat and bring to a boil, stirring constantly. Boil 1 minute. Stir hot tomato mixture gradually into the milk. Return to saucepan and heat to almost boiling.

For the doodles:

Mix the ingredients together to make a very thick batter. Drop the the batter by teaspoonfuls into the almost boiling soup, coating the spoon with hot soup each time so the batter doesn’t stick to the spoon. Turn off the heat and cover until serving time.
