Description

After eating it for years at a chain “French” restaurant, I decided to make my own. Great with “Ultimate Grilled Cheese” sandwich!

Ingredients

  • 2 Tablespoons Olive Oil
  • 2 cloves Garlic, Minced
  • 4 cans Diced Tomatoes, Italian
  • 1 pint Half-and-half

Preparation

Heat oil in saucepan. Add garlic and heat through. Add canned Italian (with basil, oregano, and garlic) tomatoes-do NOT drain. Shut lid and simmer for awhile.

Blend using a stick blender or regular blender. Or not. It’s good chunky, too.

Slowly add 1/2 & 1/2, or milk, or cream. Doesn’t matter really, except the good stuff will make it creamier.

Dish it up and top off with some shredded Parmesan cheese and basil chiffonade. YUM! An awesome accompaniment to “Ultimate Grilled Cheese” sandwich on a rainy day.

This soup was great! I stirred in a cup of grated gouda cheese at the end and it added a bit of smokiness that I liked. Thanks for the recipe—my whole family loved it!

This tastes JUST like a certain restaurant’s soup… they also sell it in jars. I was obsessed with that soup, spent way too much dinero on it, and decided to learn how to make it at home.
Imagine my surprise when I realized just how easy it was!
