Description

Nothin’ says lovin, like this soup in your mouth on a soggy day!

Ingredients

  • 3 Tablespoons Butter Or Olive Oil
  • 2 cups Rough Chopped Onions
  • 4 whole Medium Tomatoes, Rough Chopped
  • 1 can (28 Oz. Size) Crushed Tomatoes
  • 2 cups Half-and-half
  • 1 cup Fresh Chopped Basil
  • 2 teaspoons Minced Garlic
  • 1-½ teaspoon Kosher Salt
  • ½ teaspoons Black Pepper
  • ½ Tablespoons Balsamic Vinegar
  • 1-½ Tablespoon Packed Brown Sugar
  • ¼ teaspoons Baking Soda

Preparation

Melt butter in skillet over medium heat and add onions. Saute until onions are translucent. Add rough chopped tomatoes. Saute until color of mixture is orangey then remove from heat and allow to cool just a bit before adding it to a blender. Blend this mixture until smooth. Add the puree to a stock pot with the crushed tomatoes, and all the rest of the ingredients and let it simmer for anywhere between 10 and 30 minutes. The longer it stews of course, the better basil flavor you will have.
