Description

Creamy potato soup with cheese, bacon and chives.

Ingredients

  • 3 Tablespoons Butter
  • 1 whole Onion, Diced
  • 1 clove Garlic, Minced
  • 32 ounces, fluid Chicken Broth
  • 12 whole Russett Potatoes, Peeled, Cubed And Diced
  • 2 cups Half-and-half
  • 1 teaspoon Salt To Taste
  • 1 teaspoon Black Pepper To Taste
  • 2 cups Shredded Sharp Cheddar Cheese
  • 1 pound Bacon, Fried And Crumbled
  • 1 bunch Green Onions, Sliced
  • 8 ounces, fluid Sour Cream

Preparation

In a large saucepan over medium-high heat, melt butter and add onions; sauté in the butter until the onions are translucent. Add the garlic and stir a couple of times, then immediately stir in the chicken broth. Add potatoes (add water if needed to barely cover potatoes), bring to a boil and reduce to a medium boil and cook until potatoes are tender (about 20-25 minutes). Add the half-and-half and bring to a low boil and continue cooking for an additional 10 minutes, stirring occasionally. Season with salt and pepper to taste.

For a smoother soup, you may blend with a stick blender or mash with the back of a spoon while stirring.

Serve with cheese, bacon, green onions, and sour cream on the side.

tasted really good and really easy to make but it definitely took longer to make than she estimated or my stove top just doesn’t get that hot as after you add the chicken broth and then are to boil it takes quite some time.

Sounds yummy and simple – perfect for weeknight dinner!
I especially like that it’s made without the Abominable Cream of Chicken Soup that everyone else seems to chuck into their Creamy Potato Soups…
So thanks for the recipe – I’ll make this for two tomorrow!

Made this last night..the soup was a little runny for me but after mashing some of the potatoes it was great! Nice and hearty!

DELISH!! I’ve never made potato soup before and was so happy this came out as well as it did. I had no trouble with it being bland because I salted it as it cooked and added some white pepper toward the end. I also added some smoked sausage which may have contributed to the excellent flavor. So creamy and good on rainy or chilly nights!

Made tonight for dinner but i scaled it down for two servings. It still make a lot! I didn’t change much except for eliminating the onion because I did not want a partial one sitting in the fridge.

Its very delicious though I found it a bit bland without sour cream and cheese stirred in. I will definitely make this again. Its fast, easy, and tasty.
