Description

This is my mom’s recipe with a few changes. I love trying new chowders but always come back to this one. I sub non-fat half -n-half for the whipping cream when I want to be good. This is better than most I have had in restaurants.

Ingredients

  • 6 slices Diced Bacon
  • 2 whole Medium Sized Carrots Thinly Sliced
  • 2 stalks Celery, Thinly Sliced
  • 1 whole Small Onion, Chopped
  • ½ whole Small Green Pepper, Chopped (optional)
  • 1 clove Garlic, Minced
  • 1-½ pound Thin Skinned Potatoes (white Or Yukon Gold)
  • 2 bottles 8 Oz. Clam Juice Or Nector
  • 8 cans 6.5 Oz. Cans Chopped Clams
  • 1 whole Bay Leaf
  • ½ teaspoons Liquid Hot Pepper Sauce
  • ¼ teaspoons Fresh Ground Black Pepper
  • 1-½ teaspoon Worcestershire Sauce
  • ¾ teaspoons Dried Thyme
  • 4 cups Whipping Cream
  • Salt To Taste
  • Thicken With Cornstarch And Cold Water Mixture If Desired

Preparation

1. In a 6-8 quart stock pot, cook bacon over med. heat until crisp. Remove from the pan, drain and set aside. Discard all but 2 tbls. of the drippings. Add carrots, celery, onion, green pepper, and garlic to the drippings and cook, stirring often until soft (approx. 10 min.).

2. Cut potatoes into 1/2″ cubes. Add to vegetable mix along with the clam juice and the bay leaf. Bring to a boil, reduce heat, cover and simmer until potatoes are tender (about 15 min.).

3. Stir in the clams and their liquid, hot pepper sauce, pepper, Worcestershire, thyme, cream and bacon. Heat until steaming over med. low heat. Season to taste with salt. Thicken if desired.

You can chop some of the potatoes or additional potatoes into very small pieces they will cause more thickening too.

This was a smash hit at my house–even gaining the approval of two 11-year-olds! We really enjoyed the addition of the veggies–they added lots of flavor and some pretty color. I whisked in xanthan gum to thicken it up, which worked perfectly!

Several reviewers have commented on the “non” thickness of this chowder. I do state in the ingredient section and at the end of the instructions to thicken if or as desired. Any of the usual thickening methods works – I prefer the cornstarch but my friend even uses dehydrated potato flakes to thicken her soups. Enjoy – I don’t think the flavor will disappoint you and the thickness is totally in your control.

Delicious, though not quite as thick as you might expect from the picture. Still, this is the best home made clam chowder I’ve had so far.

Loved the flavor of this chowder; the only problem I had was that it was way to thin for my taste and I couldn’t get it up to a thick chowder consistency. Next time, I’ll drain the clams because I think the additional juice was overkill.

Best clam chowder ever. We used chipotle hot sauce and ended up reducing it for 20 mins after adding the cream and spices but before adding the clams.
