Description

Thursday.

Such an awkward day. Which is why, I believe, Thursday dinners should be just … fantastic. And easy. No, I take that back—Thursday dinners should be effortless.

There should be nothing happening Thursday evenings except eating, watching re-runs of your favorite shows, soaking in bubble baths and cuddling with husbands. That is the law of my blog.

Who’s with me?

Ingredients

  • 8 strips Bacon, Cooked And Crumbled
  • 5 whole Red Potatoes, Diced And Not Peeled
  • 8 cups Frozen Corn
  • ½ whole Yellow Onion, Diced
  • 6 cloves Minced Garlic
  • 4 cups Chicken Stock
  • 2 cups Half-and-half
  • 1 Tablespoon Lawry's Seasoning Salt
  • 1 teaspoon Fresh Ground Pepper
  • Shredded Cheddar Cheese And Corn Tortillas, To Serve

Preparation

1. Throw all the ingredients in the crockpot.
2. Let sit on low 8-10 hours on low or 5-6 hours on high.
3. At the end of the day, use a potato masher and gently mash the potatoes inside the crock pot.
4. You don’t have to remove the potatoes, and it should take less than 5 minutes to get a nice, thick, chowder-y mixture.
5. Combine everything well, top with shredded cheddar cheese and serve with warm corn tortillas. Corn tortillas go with everything.

Would chicken broth work instead of stock? I have broth at home, not stock, but I have everything else and this just might work for me tomorrow.

I am completely with you on that. I work especially hard on Thursdays and am unable to even think about cooking dinner. Instead of always going out, we should have some of this soup waiting!

Very good chowder and really easy to prepare. I added carrots and substituted whole milk for the half and half and added some salt and additional pepper at the end. Definitely needed to mash up the potatoes before serving to thicken it up. We will make this again.
