Description

This is a spicy and delicious soup, fit for a wonderful meal on a cold day. The spice of this soup warms you from the inside out. It’s also a very easy soup to throw together and requires almost no prep time!

Ingredients

  • 1 teaspoon Olive Oil
  • 2 Tablespoons Onion, Chopped
  • 1 clove Garlic, Minced
  • ¼ pounds Chorizo, Casing Removed (if There Is Any)
  • 1 cup Black Beans, Drained And Rinsed
  • 1 cup Quinoa, Already Cooked
  • 1 can (16 Oz. Can) Chicken Broth
  • 1 pinch Salt And Pepper

Preparation

Heat a medium-sized sauce pan over medium heat. Add the olive oil, onion and garlic and sauté for two minutes.

Add the chorizo, with the casing removed, and crumbled. Cook an additional 5 minutes.

Add the black beans, quinoa and chicken broth. Cover. Cook for about 15 minutes.

Add salt and pepper to taste before serving. Enjoy!

This soup is great! I made it tonight and it was a total success. I didn’t have chorizo, so I used keilbasa and added some red pepper flakes. Not quite the same as it would have been, I’m sure, but still really good. Thanks!
