Description

This is a wonderful summer soup to eat before the main course or it can be the main course! The flavors of the avocado meld wonderfully with cilantro and the lemon juice to make the perfect summer soup. Now I will warn you that it is a little spicy with this amount of cayenne pepper so if you aren’t a spice aficionado, reduce the amount a bit and you should be fine!

Ingredients

  • 3 whole Avocados
  • 3 cups Chicken Broth
  • 3 Tablespoons Fresh Lemon Juice
  • ⅓ cups Fresh Cilantro Leaves
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Salt
  • ¼ teaspoons Cayenne Pepper
  • ½ cups Crab Meat, For Garnish
  • ½ cups Mango, Chopped, For Garnish

Preparation

Combine avocado, chicken broth, lemon juice, cilantro, cumin, salt and cayenne pepper in a blender. Process until smooth. Put into a container, cover and refrigerate at least 2 hours before serving. Pour into soup bowls and garnish each serving with a little crab and mango garnish.

Serves 6.

This was very easy to make and turned out to be quite tasty. Actually, it’s better today than it was last night. The only change I will make is to reduce the salt…the tablespoon in addition to the sodium content of the chicken broth made it very salty. Next time, I’m going to use only a teaspoon. And because we’re huge cilantro fans, we’ll probably use 1/2 cup to 3/4 cup. But all in all, a refreshing summer soup. Thanks!

My neighbor and I both give two thumbs up! I used lime instead of lemon and since I didn’t want it too spicy used green Tabasco instead of the cayenne. I agree with the above comment – my broth was pretty salty and so I didn’t add any salt. Really good!

Oooh I really like this. It is creamy, smooth and cool with the perfect slight warmer from the cayenne pepper at the end. Great for summer! One thing though, I think I made a mistake with the chicken broth (made from a powder and didn’t dilute enough) which with the tsbp of salt, made it really salty. I think next time I would blend the salt in at the end, salting to taste. Thanks for the great recipe!
