Description

This is a rich, creamy and DELICIOUS soup made in the crock pot. You can keep it mild, or spice it up a little bit…whichever your family prefers

Ingredients

  • 4 whole Chicken Breasts, Cooked
  • 4 cans (10 Oz. Size) Cream Of Chicken Soup
  • 1 can Rotel Tomatoes And Chiles (10 Ounce Can)
  • 2 cups Milk
  • 2 cups Half-and-half
  • 1 pound Mexican (or Regular) Velveeta
  • Tortilla Chips

Preparation

I usually cube the raw chicken into tiny pieces and then cook with taco seasoning to add a bit of kick. We like it spicy, so I usually add some cayenne pepper to my chicken, and use the spicy Rotel.

Mix all ingredients (except tortilla chips) together in crock pot and cook on low for 7-8 hours or high for 4-6 hours. Serve over tortilla chips.

Absolutely WONDERFUL!!!

I made this for dinner last night and we loved it! I only had 2 cans of Cream of Chicken on hand, so I substituted 2 cans of Cream of Mushroom without a problem for the other 2. The flavor was wonderful and it was very filling. I felt a tad guilty about all that cheesy goodness, so I served it with a side of steamed broccoli.

Made this on top of the stove instead, halved everything except the meat and it was um, um, GOOD!!!

I made this the other night when my father-in-law was visiting. Everyone loved it–including my six year old who doesn’t eat soup. In fact, he asked me if I was saving what was left so he could have it for lunch! So easy and yummy!! Can’t wait to make it again!
