Description

A quick and easy soup that is full of flavor. If you haven’t tried it before, you must!

Ingredients

  • 2 whole Chicken Breasts, Cooked And Chopped Into Bite Size Pieces
  • 1 can (10 Oz. Can) Black Beans, Rinsed And Drained
  • 1 can (10 Oz. Can) Diced Tomatoes
  • 2 cans (13 Oz. Can) Chicken Broth
  • 8 ounces, weight Frozen Corn
  • ¼ cups Cilantro, Chopped
  • 1-½ teaspoon Granulated Garlic
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • ¼ teaspoons Fresh Ground Pepper
  • 8 ounces, weight Colby-Jack Cheese, Shredded
  • 1 package Tortilla Chips

Preparation

In a Dutch oven or large pot, combine chicken, beans, tomatoes, chicken broth and dry spices. Stir well and cook over medium-high heat for about 25 to 30 minutes or until soup is heated through. Turn off heat and stir in cilantro.

Serve with tortilla chips and a little shredded cheese. Delicioso!
