Description

A delicious soup with a kick, made simple with canned ingredients and a rotisserie chicken.

Ingredients

  • 3 cans (14.5 Oz Each) Chicken Broth
  • 1 can (10 Oz. Can) Tomatoes With Green Chilies
  • 2 teaspoons Chili Powder
  • 1 teaspoon Ground Cumin
  • ½ teaspoons Garlic Powder
  • 1 can (15 Oz. Can) Black Beans
  • 1 can (11 Oz. Can) Corn With Red And Green Peppers
  • 2 whole Green Onions, Sliced
  • 1 whole Rotisserie Chicken, About 4-5 Cups, Shredded
  • ¼ cups Half-and-half

Preparation

Pour the chicken broth, tomatoes with green chiles, chili powder, ground cumin and garlic powder in a pot. Heat to boiling, reduce to medium heat and cook for 5 minutes. Add in the black beans, corn, green onions (see note below) and chicken. Reduce the heat and simmer for 30 minutes, stirring occasionally. Stir in half-and-half cream and cook for another 10 minutes. Serve with desired toppings.

Note: I use just two green onions from the bunch that is purchased.

This turned out absolutely wonderful. Perfect for a yucky rainy night. The color of mine was nowhere near that of the picture though-it was the color of the black bean juice. Still tasted great.
