Description

A warm and comforting soup that is herby and soothing. Perfect for a cold winter day.

Ingredients

  • 2 Tablespoons Olive Oil
  • 1 whole Onion (large, Diced)
  • 5 cloves Garlic, Minced
  • 1 teaspoon Salt
  • 2 teaspoons Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Oregano
  • 8 cups Chicken Stock
  • 4 cups Shredded Chicken
  • 2 cans White Northern Or Cannellini Beans - 15 Oz. Cans, Rinsed And Drained
  • 2 cans Corn - 15 Oz. Cans, Rinsed And Drained
  • 2 cans Fire Roasted Diced Green Chilies - 4 Oz. Cans
  • 2 cans Salsa Verde - 7 Oz. Cans

Preparation

In a large stock pot over medium heat, sauté onion in a couple of tablespoons olive oil until translucent. Add garlic, salt, cumin, chili powder, and oregano and sauté for a couple of minutes until garlic is soft and spices are fragrant. Add stock and remaining ingredients and bring to a boil. Cover and lower heat and let simmer for a couple of hours. Stir occasionally.

Serve with shredded cheddar, sour cream, cilantro and tortilla chips.
