Description

This soup is so creamy and delicious! Don’t let the processed cheese product scare you. I wasn’t sure about it at first, but now I’m a believer with this soup. My daughter wants me to make yet another batch!

Ingredients

  • 5 cups Peeled, Chopped Potatoes
  • 1-½ cup Peeled, Chopped Carrots
  • 1-½ cup Chopped Celery
  • 1 teaspoon Salt
  • 6 cups Chicken Broth
  • 1 pound Pasteurized Processed Cheese Product, Cubed (I Used Velveeta)
  • 2 cups Diced Ham
  • 12 ounces, fluid Evaporated Milk
  • 1 cup Milk (Skim, Low-fat, Or Whatever You Have On Hand)
  • ½ teaspoons Black Pepper

Preparation

In a 5-quart pot, combine potatoes, carrots, celery, salt and broth. Boil for 20 minutes. Remove from heat and slightly mash potato mixture.

Stir in cheese product, ham, evaporated milk, milk and black pepper. Return to medium-low heat and cook until bubbly.

You can garnish with yummy toppings if you so desire, such as shredded cheese, chopped green onions, sour cream, crispy crumbled bacon, or whatever sounds good to you.

What an amazing soup! It’s like a loaded potato in soup form! I mean really, you can’t go wrong with cheese, potato, ham and vegetables! Mmm!

I did garnish with green onions. It gave a great added flavor of onion with some crunch.

Thanks for such a great recipe. Definitely a keeper!
