Definitely recommend 2 heads of cauliflower. I only used one and was regretting it after the soup was simmering. Delicious anyway!

Delicious, and simple. Though I just tossed in whatever I had or looked good for the ingredients.. I didn’t follow the amounts given. Never do! Blended it a wee bit with an immersion blender and added some garlic.
Will definitely make again.

I halved the recipe as there’s only two of us in my household! This soup was great! Next time I make it, I may blend part of it and add it back in to make it a little thicker. I also used 1% milk and cream instead of the whole milk and half-and-half because that’s what I had in the pantry. Delicious!

This soup is ridiculously good. It even cured my husband of his aversion to cauliflower. I was a little intimidated by the amount of dairy in the recipe, but it is PERFECT! I served the sour cream on top instead of mixing it in and it really does make the soup!

Holey Moley … made this for dinner last night and boy was it ever goooooooood! I halved the recipe as there are only two of us, and it was plenty for dinner and we had leftovers for lunch today. Easy to prepare, creamy and oh so delicious. Try it today!

I made this soup the other night and EVERYONE loves it. I have had it for dinner the past 3 nights. I just can’t stop eating it. I do wish it were thicker but I can live with it. YUMMY!!!!!

This is the recipe that first brought me to the PW site on a cold January day in 2009. Our house absolutely love it and, in fact, I’m going to make it right now. They don’t sell half and half here so I use a can of evaporated milk instead. It could change the flavour but I wouldn’t know and if it ain’t broke, don’t fix it!

My family loved this recipe, I was surprised, because Cauliflower is not my husbands favorite veggie, at first he thought it was potato shop, because it was so creamy, but HE loved. I Can’t say enough how delicious this recipe is..it’s the BEST. And it’s easier than you think to prepare. Enjoy..it’s Fine Dinning at home recipe.

Made this for dinner last night with a loaf of Rustic White Bread from the America’s Test Kitchen cookbook. Both turned out perfect and after his first bite of soup, my husband said, “Oh my gosh! This is going in our permanent recipe file!” It’s officially our favorite way to cook cauliflower now! Thanks Ree!!

I made this soup the other night (no cream in the house, so I used evaporated skim milk-worked great) My husband and kids all asked for seconds. In case you missed the wonder, glory and miracle of this: My four, three and two year old all asked for MORE CAULIFLOWER soup. This combined with the Rosemary rolls were a quick, simple and very tasty meal. Thank you for this recipe!

I made this last night, minus the sour cream. It was delicious! My daughter 7 even liked it and she is not a fan of soup.

I made this soup last night and it was easy and delicious! It took no time at all to prepare the veggies and it was simple but so tasty. Normally my husband makes dinner, but I was the star last night. He loves it and so do I! The next time I make it I am going to add some garlic & potatoes to thicken it up. And I left the cauliflower pretty chunky, but it would also be good smoother with an immersion blender.

When I was making this last night, my picky 17 year old daughter turned up her nose and said “I don’t like cooked cauliflower.”
When the soup was done she took a bite and decided that she really liked it. In fact she ate a whole bowl and then I caught her eating more out of the pan while it was cooling! I’m taking the leftovers to my grandmother tonight because I know she will love it, too.

This soup in amazing and so simple. My entire family loved it and it was a great way to sneak in extra veggies. I used my imersion blender to “hide” the cauliflower a little more, used 2% milk since it’s all I had on hand and light sour cream, but it was simply delicious.

This soup is DELICIOUS! I made it the other night and it was quick and easy – ready to slurp down in no time! I made a few adjustments though..I added peppered bacon and cut down the amount of butter (yum, bacon!) and also used 2% milk since there was no cream in the house. Turned out creamy anyway with the addition of sour cream

This makes a TON! And it is quite good. I have just used whole milk in place of the 1/2 and 1/2, and it was still good and rich. I’d recommend using 2 whole cauliflower heads.
