Description

Don’t heat up your kitchen! Enjoy a bowl of my Aunt Cathy’s cool, satisfying gazpacho tonight for a light summer supper.

Ingredients

  • 1 cup Peeled Tomatoes, Finely Chopped
  • ½ cups Finely Chopped Bell Pepper (can Use Any Color)
  • ½ cups Diced Cucumber
  • ¼ cups Minced Onion (red Onion Is Especially Good)
  • 2 teaspoons Snipped Parsley
  • 1 teaspoon Snipped Chives
  • 2 cloves Garlic, Minced
  • 3 Tablespoons Red Or White Wine Vinegar
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 teaspoon Salt
  • ¼ teaspoons Freshly Ground Pepper
  • ½ teaspoons Worcestershire Sauce
  • 3 cups Tomato Juice

Preparation

Combine all ingredients in a large bowl. Add more tomato juice if a thinner consistency is desired. Chill until time to serve. Add more salt and pepper to taste. This is great with condiments such as a dollop of sour cream or creme fraiche, sliced green onion, a drizzle of high quality olive oil, or all of the above!
