Description

A beautiful pureed carrot soup spiked with honey and heavy cream. Totally dreamy.

Ingredients

  • 3 pounds Baby Carrots
  • 2 quarts Vegetable Stock Or Chicken Stock
  • 2 sprigs Fresh Thyme
  • ⅓ cups Honey
  • ½ cups Heavy Cream
  • Dash Of Salt

Preparation

Combine carrots, stock, and thyme in a pot. Bring to a boil, then reduce the heat to low and simmer for 45 minutes to 1 hour.

Remove from heat and transfer soup in two batches to a blender (or you may use an immersion blender.) Puree soup completely, then stir in honey and cream. Taste, then add salt as needed.

Use a little warm broth if the soup needs thinning.

Serve while warm with a sprig of thyme on top.

I just made this for lunch – it’s great, but 1/3 cup of honey is way too much. I’d reduce it to a single spoonful, then adjust to taste. Great with the cream and thyme though – very decadent!

OMG I made this today, it is so good. Sent hubby out to dig some fresh carrots, didn’t have fresh thyme so used dried. This was so easy and has alot of flavor. I used Chicken broth and an emersion blender. YUMMY
