Description

Delicious carrot ginger coconut soup goes great with potstickers.

Ingredients

  • 12 whole Carrots, Peeled And Chopped
  • 1 quart Vegetable Stock
  • 3 Tablespoons Freshly Grated Ginger
  • 2 cloves Garlic, Grated
  • 1 cup Coconut Cream

Preparation

1. Add chopped carrots to a saucepan. Add vegetable stock. Add fresh ginger and garlic. Bring to a boil, and cook until tender. Add more water to keep the carrots covered during the cooking process if needed.
2. When carrots are very tender, remove from heat. Use a submersible blender or add soup in batches to your blender to puree. Add coconut cream, and heat through.

the coconut cream is beside the coconut milk, in a Spanish brand, if your grocery store has it. You can also get it in the Asian grocery store. The coconut milk will work too, I just wanted more flavor.

Yum! ? is the coconut cream the sweetened drink mixer stuff that is used for pina coladas or is it just full fat coconut milk which is the consistany of heavy cream?
