Description

Healthy and hearty 30-minute Cannellini Sausage Kale Soup with carrots and celery in a deliciously warming broth.

Ingredients

  • 1 Tablespoon Olive Oil
  • 1 whole Shallot, Sliced
  • 4 cloves Garlic, Minced
  • 12 ounces, weight Fully Cooked Chicken Sausage, Cut Into Chunks
  • 1 cup Carrots, Sliced
  • ½ cups Celery, Sliced
  • ½ teaspoons Sea Salt
  • ½ teaspoons Paprika
  • ½ teaspoons Thyme
  • 5 cups Vegetable Broth
  • 1 Tablespoon Tomato Paste
  • 2 cups Kale, Roughly Chopped
  • 1 can (15 Oz. Size) Cannellini Beans

Preparation

Heat oil in a large pot or Dutch oven. Add sliced shallot and sauté until translucent, 2 minutes. Add minced garlic and sauté until fragrant, another 2 minutes.

Add sausage, carrots, celery and spices (salt, paprika, thyme). Sauté, stirring often, for 5 minutes. Add broth and tomato paste. Cover and let it simmer for 10 minutes.

Add kale and cannellini beans. Turn heat down to low, cover and simmer for an additional 5–6 minutes.

Serve hot with a baguette or crackers.
