Description

Made with a few pantry ingredients, you’re going to love this incredibly delicious soup. Serve steaming hot with with a stack of toasty grilled cheese sandwiches. Heaven.

Ingredients

  • 28 ounces, fluid San Marzano Crushed Tomatoes
  • 1 cup Half-and-half
  • 1 cup Milk
  • 2 teaspoons Dried Basil
  • 1 teaspoon Dried Granulated Onion
  • ½ teaspoons Celery Seed
  • ½ teaspoons Kosher Salt
  • ½ teaspoons Finely Ground Black Pepper
  • Basil Oil, To Drizzle Over Soup

Preparation

Combine all ingredients together in a medium saucepan and heat, stirring occasionally. Drizzle with basil oil and serve.

For silky smooth soup, puree in a blender before serving.

Note: San Marzano tomatoes are a very low acid tomato. If you substitute another variety, use low-fat milk and non-fat half-and-half to prevent curdling.

Hi kkd555 – the basil oil takes it to “the next level” so to speak, but you can certainly do without. I like your idea of adding pesto. A few fresh basil leaves would be nice too. To me, there’s a huge flavor difference between fresh and dried basil, so having a little of each flavor works really well in this soup.

going to try this tonight and will post a review. don’t have basil oil. might add a dab of pesto? or skip it since it has basil already. thanks it looks yummy!

love this!! my 7-year-old disagrees, however; but you can’t count on her taste. Had a glitch–the milk/half-n-half curdled on me–any tips on preventing this? I did puree it with my immersion blender, which helped a lot. I’ll make the lil’ one taste it ten more times, before I give up.

Tried this last night and was a hit with my family! I used Olive Oil as the oil and it was delicious! I love the idea of putting parmesan and croutons on the top…OMG! Thank you so much for the recipe! :)
