Description

A delicious low-fat soup that is under 180 calories per serving! Perfect for after Thanksgiving!

Ingredients

  • 2 cups Brussels Sprouts, Tough Stem Trimmed Off, Then Quartered
  • 1 cup Sliced Carrots
  • 1 cup Sliced Celery
  • 1 whole Medium Onion, Chopped
  • 2 cloves Garlic, Chopped
  • ½ cups Sliced Or Shredded Rotisserie Chicken
  • 1 cup Sliced Chicken Sausage
  • 1 leaf Bay Leaf
  • 4-½ cups Low Sodium Chicken Broth
  • 2 Tablespoons Crushed Red Pepper
  • Salt And Pepper, to taste

Preparation

Place the vegetables, garlic, chicken, chicken sausage and bay leaf into the basin of a crockpot. Pour broth over the mixture and add crushed red pepper, salt and pepper.

Set crockpot on medium and cook for 3 1/2 hours, stirring every hour. Reduce heat to low and cook an additional hour, or until all vegetables are soft. Serve immediately with crusty bread or dinner rolls!
