Description

Potato soup with sausage in it. Does it get better? I think not.

Ingredients

  • 1 Tablespoon Butter
  • 1 whole Onion, Chopped
  • 2 whole Medium Carrots, Shredded
  • 2 whole Medium Potatoes, Peeled And Diced
  • 1-½ cup Chicken Broth
  • 12 ounces, weight Cooked And Sliced Bratwurst
  • 2 dashes Salt And Pepper

Preparation

Melt the butter in a large pot over medium high heat. Saute onions and carrots and a little salt and pepper for a few minutes until soft and tender.

Add potatoes, broth, and sausage to the pot. Season with salt and pepper.

Cover and simmer for 20 minutes until the potatoes are very tender. Remove the sausage and puree the potatoes with a stick blender until the soup is nice and thick but still has a few chunks of potatoes.

Add the sausage back to the pot.

Serve and enjoy!

update, the half and half seemed to bring out the flavor a good stretch. glad I looked at your website.

anddd I just noticed on your own website, it lists cream. I’m sure that would affect things. is this an old version here? I wonder because it’s not in these instructions, either. I have half and half so I’ll try adding a little of that.

I cannot rate because I was unable to copy exactly as written. I don’t have a stick blender, or any blender. so I used a potato masher. unable to achieve the correct consistency. results were underwhelming and I just wonder if the right consistency would have been better. not a lot of flavor but still good. and I’m sure if I had time to let it chill and reheat, the flavor would become more complex. but it’s time for dinner lol. either way I’m enjoying it, thank you for it.

I actually dumped this all in my crockpot and used 2 cups of chicken broth and it came out really good! I don’t know if it changed the taste at all but I won’t know that unless I get a little less lazy and cook it by the directions :-P
