Description

Bitterness mellowed down to a tolerable and pleasant extent.

Ingredients

  • 1 pound, 1-⅔ ounces, weight Bitter Gourd, Core Removed And Cut Into Chunks
  • 1-½ pounds, 2-½ ounces, weight Chicken Pieces, With Bones
  • 1 whole Carrot, Peeled And Cut Into Chunks
  • 5 whole Chinese Dried Mushrooms
  • ½ cups Yu-zhu/Yuk-chuk (玉竹)
  • ⅓ cups Dried Scallops
  • 6 cups Water
  • 1 teaspoon Salt To Taste

Preparation

Cut bitter gourd in half lengthwise. Remove/scoop out all the seeds and white spongy stuff. Cut into pieces.

Place all ingredients in a pot. Cook under pressure for 45 minutes.

Leave to cool on its own. (If not using a pressure cooker, you can simmer it for at least 2 hours.)

Season with salt.
