Description

Great tasting, easy to make and tastes just like Mom’s.

Ingredients

  • 1 pound Bacon, Cut In 1/4 Inch Pieces And Fried Crispy
  • 3 Tablespoons Olive Oil
  • ½ whole Yellow Onion, Diced
  • 4 whole Stalks Celery, Sliced Thin
  • 3 whole Carrots, Sliced Thin
  • 2 Tablespoons Minced Garlic
  • ¼ cups Parsley, Chopped
  • 2 whole Bay Leaves
  • ½ teaspoons Basil
  • ½ teaspoons Pepper
  • 1 teaspoon Salt
  • 1 pound Dry Great Northern Beans
  • 12 cups Water
  • 1 teaspoon Chicken Bouillon Granules

Preparation

In a medium skillet, fry bacon pieces until crispy. Do not drain. Meanwhile, in a soup pot, add olive oil and saute onions, celery, carrots and garlic for about 10 minutes. Then add bacon and bacon fat, followed by the rest of the ingredients. Bring to a boil, stirring occasionally. Put the lid on the pot and turn off the heat and let set 1 hour. Turn the stove back on medium heat and uncover; simmer soup for 2 more hours, stirring occasionally. Just before serving, using a potato masher and slightly mash some of the beans to thicken the soup. Enjoy with your favorite rolls or French bread.

Yes, I put the beans in dry and then brought to a boil with all the ingredients and let set, as in the recipe :-) enjoy!!
