About this delicious soup … well it’s easy and fast to make! Yep. I love to cook but don’t really enjoy spending lots of hours in the kitchen. Especially on hot summer days. All you need to do is quickly peel and rinse the veggies, cut them in chunks and let them boil. Ready in less than 30 minutes, this soup is just perfect for summer. Add some croutons and it will be even better!

Who else is a sucker for soup? There is something so comforting and homey about a warm bowl of soup no matter what the weather is outside. Of course soup is way better in the cold winter months, but in the spring and summer when the produce is at it’s peak, you have to take advantage! And just the mere mention of Velveeta makes my heart tingle and mouth water.

Hungarian cuisine contains a large repertoire of classics. So extensive is the list that one might never be inclined to look outside the recipe box of traditional favorites and try one of the newer ways of cooking ‘Hungarian style’. This is one of those recipes that is outside the traditional box and it’s a good example of the innovative side of the new Hungarian kitchen.

This was delicious! I just made it tonight and it was so quick and easy. I added green beans just because they needed to be used. So tasty. Thank you beachmama

Oh no, I accidentally hit “4 Mitts” instead of “5 Mitts”, so your rating went down…I’m so sorry, I don’t know how to fix it!

Beachmama! This is a GREAT recipe; thank you so much for sharing.
I made this and it was a hit with the hubs. I actually tripled the recipe so we could freeze some for later on this autumn.
I used Bob Evans Kielbasa and fingerling potatoes; and they both really added a lot of flavor to it.
I did a full review/experience with photos on my blog here: http://simplicityembellished.com/2009/10/bean-and-sausage-soup/

Just what I like in a recipe ~ easy to make, all item already in my home, and delicious! I definately will make this again and freeze some. When I make the soup to freeze I wont make with the potatoes because in my experience potatoes turn funky when frozen in soup. Maybe someone has a suggestion for me?
Thanks for sharing such a great recipe.

I made this today! (4/4/10)
The night before (I was working a night shift) I had step-daughter and husband chop up the fixin’s. They put them in containers and left them in the fridge for me for morning. I dumped all the ingredients into the crock pot.
I used sweet basil rather than oregano, but other than that, stuck to the recipe.
We had rolls and a salad with the soup and it was declared delicious by all!
