Description

Seasoned and baked potato wedges.

Ingredients

  • 12 whole Medium Red Potatoes
  • ¼ cups Olive Oil
  • ¾ cups Italian Style Bread Crumbs
  • 1 package (about 1 Oz. Packet) Zesty Italian Salad Dressing Mix (See Note)
  • 1 teaspoon Paprika
  • ½ teaspoons Minced Garlic
  • ¼ teaspoons Ground Pepper
  • ¼ teaspoons Salt

Preparation

Preheat oven to 450F.

Wash and cut potatoes into wedges. Place potato wedges into a large bowl or gallon-size bag and drizzle with olive oil.

Combine all other ingredients in a small mixing bowl. Add dry ingredients to potatoes. Shake in the bag or stir in the bowl until all potatoes are coated with the seasoning mix.

Place on a baking sheet or 9×13 pan and bake for 45 minutes, stirring and flipping potatoes halfway through. Remove from oven, salt to taste and serve.

Potatoes should be light and golden brown when they are finished. Bake time may vary depending on the size of potatoes.

Note: Substitute zesty Italian dressing mix with any other dressing or dip mix. As a kid, I always enjoyed it with Hidden Valley ranch mix.

I thought these were really good. I used the ranch dry mix instead of the italian. Added some garlic salt and parsley flakes and use cubed skin-onwhite potatoes instead of red wedges since I didn’t have red. I baked them as directed and they were very tasty with some crunch. My 16 year old thought they were really good too. I would definitely make these again.

Hubby was skeptical, but he is a picky eater…and he ate them right up! I tried it with the Zesty Italian seasoning, but would love to try the ranch. I added a little bit of grated parm. cheese because I had some left over. I get so tired of doing mashed and/or baked potatoes and french fries all the time…this was a nice twist to go along with our steaks! The only problem I had was mine turned out a little dry. I’m not sure if I did something wrong (I accidently cooked them at 400 degrees) so that might have been my problem? Next time, I might try adding some white wine to give them a little kick.
