Ingredients

  • 10 whole Yellow Squash
  • 5 slices Bacon
  • ½ cups Onion, Chopped
  • ¼ cups Green Pepper, Chopped
  • ¼ teaspoons Black Pepper
  • 1 whole Egg
  • 1/2 Sleeve Saltine Crackers, Crushed
  • 6 ounces, weight Velveeta Cheese, Cubed

Preparation

Preheat oven to 350 degrees F.

Slice squash. Place in large saucepan, salt to taste, cover with water, and cook until tender. While squash is cooking, chop bacon and sauté in a small skillet with onion and green pepper. Cook until bacon is done. Drain squash and return to pan; mash up the larger pieces. Add bacon mixture, black pepper, egg, and crackers. Mix well. Add cheese and stir one last time. Place in well greased casserole dish and bake for 20 to 30 minutes.
