Description

Steamed yellow beans tossed with flavorful Italian-style salsa verde.

Ingredients

  • ⅓ cups Flat-leaf Parsley, Coarsely Chopped
  • 1 teaspoon Fresh Lemon Zest
  • 1 clove Garlic, Finely Chopped
  • 1 Tablespoon Capers, Rinsed, Drained And Coarsely Chopped
  • ½ teaspoons Salt
  • ½ teaspoons Fresh Ground Pepper, Or To Taste
  • ½ cups Olive Oil
  • 1-½ pound Yellow Or Green Beans, Trimmed

Preparation

To prepare the salsa verde, combine the parsley, lemon zest, garlic, capers, salt, pepper and olive oil in a bowl. Stir, and if possible, let sit for a few hours in the fridge to let flavors develop.

Steam the yellow or green beans in a steamer rack for 5 minutes or until desired texture. Toss with the salsa verde.
