Description

Farmers’ market fresh with so much flavor.You need this in your life.

Ingredients

  • ½ cups Raisins
  • ¼ cups Chicken Stock
  • 4 Tablespoons Butter
  • 12 cups Fresh Spinach Leaves, Washed
  • ¼ cups Toasted Pine Nuts Plus Extra For Garnish If Desired
  • 2 cloves Garlic, Peeled And Minced
  • Salt, If Needed, To Taste

Preparation

Place the raisins and chicken stock together in a small bowl. Microwave for 30 seconds, then remove the bowl from the microwave and set aside while you prepare the rest of the dish.

Preheat a large skillet to medium-high heat with the butter. Allow the butter to melt, then let it foam. Swirl the butter until brown bits form on the bottom of the pan, then turn the heat down to low.

Add the spinach, pine nuts, drained raisins (set stock aside), and garlic to the butter with 1 tablespoon of the chicken stock. Toss together with tongs for 1 minute, or until the spinach just starts to wilt.

For a light sauce, add more of the chicken stock 1 tablespoon at a time and let the mixture simmer gently while the spinach wilts.

Taste, and add salt to your taste, if needed.

Serve hot with extra pine nuts for topping.
