Description

Lightly caramelized onions with white squash or zucchini, fresh mushrooms and tomatoes, smothered with melted Parmesan cheese. Fast, easy, totally yummy!

Ingredients

  • 1 Tablespoon Extra Virgin Olive Oil
  • 1 whole Medium Onion, Sliced
  • 2 whole Medium Zucchini ¼ Inch Slices
  • 1 cup Sliced Fresh Mushrooms
  • 1 Tablespoon Italian Seasoning
  • ¼ teaspoons Garlic Powder, Or To Taste
  • Salt And Pepper, to taste
  • 2 whole Roma Tomatoes, Diced
  • ½ cups Parmesan Cheese

Preparation

Heat a medium sized frying pan on medium high heat. Sauté the sliced onion in 1 Tablespoon of extra virgin olive oil. Cook until the onion just starts to brown, add the zucchini and mushrooms. Continue cooking until the zucchini and mushrooms get light brown. Toss in the Italian seasoning, garlic powder, salt and pepper to taste, then add tomatoes and stir. Turn off or lower the heat and top with the Parmesan cheese. Cover and let it hang out until the cheese is melted. Then serve!
