Description

Wonderful use for those ripe tomatoes in your garden. Or, if you’re like me and don’t have a garden, grab some from a friend! This pie says SUMMER!

Ingredients

  • 1 whole Store-Bought Pie Crust
  • 4 whole Tomatoes, Peeled, Cored, Seeds Removed
  • 8 leaves Fresh Basil (8-10 Leaves)
  • ⅓ cups Chopped Green Onion
  • 1 pinch Salt To Taste
  • 1 pinch Pepper To Taste
  • 1 cup Grated Part-skim Mozzarella Cheese
  • 1 cup Grated Cheddar Cheese
  • 1 cup Mayonnaise

Preparation

1. Cook store-bought pie crust according to package directions and allow to cool.
2. Clean and slice your tomatoes and arrange the slices in the crust, overlapping them.
3. Add basil and onion, then sprinkle with salt and pepper to taste.
4. Mix cheeses and mayonnaise in bowl.
5. Spread over tomatoes.
6. Bake at 350 degrees for 30 minutes, or until lightly brown.
7. Cool about 10 minutes before slicing.

DELICIOUS! If you follow the direction exactly (and there are even better tips on her blog!) you are going to get a delicious tomato pie. The fresh basil and green onion add so much flavor to the tomatoes. I used reduced fat mozzarella and reduced fat sharp cheddar along with Hellman’s Canola mayo to help lower the fat content and I was very pleased with the results! This recipe is definately a keeper for the summer months of fresh tomatoes!

Made this tonight for dinner. It was so tasty! I was a little concerned that everything wouldn’t fit in the pie crust I bought, but it did. Thanks for the recipe. Can’t wait to make this again! Great way to use my garden tomatoes and my basil.

Was so excited to make this recipe, I had to go with what I had on hand, so I used red onion instead of green, and used cheddar and parm, instead of cheddar and mozzarella. It was delicious, but, I had 4 tomatoes ready to go into my deep dish 9 inch crust, and I could only fit in 2 tomatoes, so I had either super large tomatoes, or didn’t use a big enough crust. This was so good, my husband had seconds. Thanks, this is going in the permanent file!
