Eggplant—brinjal or baingan as we call it growing up in India—is one of the vegetables people either love or despise. i make these all the time—but i add some cavender’s greek seasoning, and maybe a bit of rosemary.

I grew up on fried sweet potatoes! Yours are a little different, but look wonderful!

Yum! I love sweet potato fries, so I bet chips are great too! Good call on the Cavender’s Susan….that’s like my secret ingredient in everything. My mom uses it on chicken fajitas…to die for!

I also LOVE these with a little chili powder when I want to kick it up a notch!!!!!
Also equal parts mayo and sour cream mixed with curry powder to taste (LOTS) makes a fantatic dip for these wonderful chips.

If you put cinnamon sugar on these right out of the oven or fried, they are fabalous.

These are amazing! I cut them a bit thicker, then I sprinkled parmesan cheese on them right out of the oven and serve them as an appetizer!

I’ve had something like these with blue cheese crumbles, a balsamic vinegar glaze drizzled over them and a little red pepper jelly. I’m sure it isn’t good for you, but YUMMY!

I like these too but I put a little garlic powder and a little cinnamon on mine.
