Description

Light, delicious side dish. I got a lot of compliments for something so easy to make with things you have on hand. Leave out the bacon for your vegetarians.

Ingredients

  • 1 pound Green Beans, Fresh, Trimmed
  • 4 slices Bacon, Lean, Cooked And Crumpled
  • 2 Tablespoons Olive Oil, Extra Virgin
  • 4 Tablespoons Onion, Chopped
  • 1 Tablespoon White Vinegar
  • 1 Tablespoon Sugar
  • 1 teaspoon Sea Salt
  • 1 teaspoon Black Pepper, Freshly Ground
  • 2 Tablespoons Parmesan Cheese, Finely Grated, Optional

Preparation

Cook green beans in boiling water to which salt has been added for 20 minutes or until desired tenderness is obtained. Drain.

While the beans are boiling, cook bacon until crisp and and set aside on paper towel to absorb extra grease.

Heat a skillet, add olive oil and onion. Cook onion until soft. Add vinegar and sugar, stirring to blend ingredients.

Add drained, cooked green beans and toss with the olive oil mixture to blend and heat through. Sprinkle with sea salt and black pepper.

Top with crumpled bacon and Parmesan cheese if desired.

I left out the bacon and Parmesan cheese. This was really good! My vege-phobic daughter actually ate it – will definitely make this again

Very delicious and easy to make. I tried the beans before adding the bacon and they were still really good so if you wanted to omit the bacon it wouldn’t be a problem. I can’t wait until I make this again!
