Description

Fresh tomatoes and creamy avocado combine for a summer cous cous.

Ingredients

  • 1 cup Water
  • 1 cup Whole Wheat Cous Cous
  • ¼ cups Extra Virgin Olive Oil
  • 1 whole Lemon, Juiced And Zested
  • 1 Tablespoon Fresh Parsley, Chopped
  • 1 cup Diced Tomato
  • 1 whole Green Onion, Chopped
  • 1 whole Avocado, diced
  • 1 clove Garlic, Minced
  • ½ teaspoons Salt, More To Tastse
  • ½ teaspoons Pepper, More To Taste
  • 2 Tablespoons Freshly Grated Parmesan Cheese

Preparation

Bring 1 cup of salted water to boil. Turn off the heat, add the cous cous and stir. Cover and let sit for five minutes.

Meanwhile, whisk the olive oil, lemon juice and parsley in a medium bowl. Add the tomato, green onion, avocado and garlic and mix.

When the cous cous is ready, add it to the other ingredients and mix well. Add salt and pepper to taste and garnish with Parmesan cheese and lemon zest (if desired).

This is best served at room temperature or chilled but can be served warm as well.

Oops! I used a whole avocado, just sliced and diced it and threw the chunks in. I love avocado though so you if you aren’t a huge fan, you could use less.

I doubled the recipe but made it exactly as it called for….. so delicious! Everyone at the cookout loved it. The lemon zest, avocado, parmesan — it all goes beautifully together. And, super quick to put together!

We loved the bright lemon flavor, and of course all the other ingredients, also. I didn’t have fresh parsley, so I subbed in cilantro. It went really well with the avocado & tomato.

Just tried this for the first time & my family LOVED it! Next time, I will probably add extra tomato, avocado & lemon juice just because we would like it, but the recipe is great as is.
