Description

I tasted this dish at my vegetarian BILs (boyfriend-in-laws), and HAD to get the recipe! A longtime family friend of theirs referred to the dish as “Stuff in a Pan” as a child, and the name stuck. This is a healthy, delicious scramble of tofu, peas, potatoes and onions with a hint of Indian spices.

Ingredients

  • ½ whole Potato
  • ¼ whole Onion
  • 1 clove Garlic
  • ¼ packages (14-16 Oz. Package) Extra Firm Tofu
  • 1 teaspoon Curry Powder
  • ¼ cups Peas

Preparation

Peel and cut potato into 1/4″ cubes. Bring a pot of water to boil, and parboil potato cubes for approximately 5 minutes.

Mince onion and garlic.

Cut tofu into 1/2″ cubes.

Heat oil in a small saute pan. Add onion and garlic, and cook until softened.

Drain potato cubes and add them to the saute pan. Add tofu cubes and stir fry until all sides are golden brown. Add more oil if necessary.

Add peas and curry powder to the pan, and stir-fry until everything is mixed well. Note: equal parts of Indian spices (coriander, cumin, ginger, turmeric) that add up to 1 teaspoon may be used.

Season with salt and pepper to taste. Serve warm.
