Description

A healthy but comforting Southern side dish that can be served year round!

Ingredients

  • 3 Tablespoons Olive Oil Or Oil From Sun-dried Tomatoes
  • ½ pints Cherry Tomatoes ,Cut In Half (or 1 Whole Diced Tomato)
  • 4 cups Fresh Or Frozen Okra, Cut Into Bite-sized Pieces
  • 4 cloves Garlic, Minced
  • 1 dash Salt
  • 1 dash Water

Preparation

Heat a pan on the stovetop to medium-high heat.

Add the oil and tomatoes and saute for 2 minutes until the tomatoes start to wilt.

Turn the heat down to medium. Add the okra and saute for 5 minutes until soft and the slime releases.

Add the garlic, a sprinkle of salt and a splash of water. Let vegetables continue to cook until water is nearly evaporated and the okra is soft.

NOTE: If you’re using frozen okra you probably won’t need the water since water will be released from the melting process.

Taste and add more salt if needed. Serve with your favorite southern-style meal!
