Description

A creamy cheesy au gratin potato dish with added spinach and caramelized onion goodness.

Ingredients

  • 8 whole Red Potatoes, Cubed
  • 5 ounces, weight Fresh Spinach
  • 4 Tablespoons Butter, Divided Use
  • 1 whole Onion, Sliced
  • 1 teaspoon Crushed Garlic
  • 3 Tablespoons Flour
  • 1 cup Milk
  • 1 cup Cream
  • ½ teaspoons Salt
  • 2 cups Muenster Cheese, Divided Use

Preparation

Toss together your potatoes and spinach in a 2-quart baking dish. Set aside.

Now, melt 3 tablespoons of butter in a medium saucepan and add your onions. Cook over medium-low heat til onions are nice and caramelized. Add the garlic and cook for another minute or so. Now add the remaining tablespoon of butter. Once, melted add flour and stir til it’s a nice golden color. Slowly pour in the milk and cream and stir til thickened. Add the salt and 1 1/2 cups of the muenster cheese. Once the cheese is all melted and all nicely incorporated, pour over the potatoes and spinach.

Preheat your oven to 400 degrees. Cover your dish and cook 30 minutes. Now uncover and cook an additional 20 minutes. Now remove from the oven and top with the remaining 1/2 cup of cheese. Put back in the oven for an additional 10 minutes. Enjoy!
