Description

I used to hate spinach until I realized it’s delicious with cheese and bacon. So I threw this little side dish together and it immediately reminded me of spinach dip—except you can eat it with a spoon.

Ingredients

  • 20 ounces, weight Frozen Spinach
  • 1 cup Water
  • 8 ounces, weight Cream Cheese
  • 6 strips Cooked Crisp Bacon, Chopped Into Large Pieces
  • ½ teaspoons Onion Powder
  • ½ teaspoons Garlic Powder
  • 1 cup Shredded Parmesan Cheese, Divided
  • Salt And Pepper

Preparation

Preheat oven to 350ºF.

Put the frozen spinach in a large sauce pan with the water and bring to a boil. Reduce heat to medium, cover and let cook for about 8 minutes. Separate spinach with a fork and drain in a colander.

Put the spinach back in the sauce pan and add the cream cheese. Cook over medium heat stirring constantly until the cream cheese is completely melted.

Add the onion powder, garlic powder, bacon, and half of the shredded parmesan cheese. Mix well.

Salt and pepper to taste.

Pour the spinach mixture into a baking dish and evenly sprinkle the remaining parmesan cheese over top.

Bake for about 10 minutes. Serve hot and enjoy!
