Description

A super easy and very tasty recipe for yellow squash.

Ingredients

  • 2 whole Yellow Squash, Sliced
  • 1 can (10 Oz. Size) Ro-Tel, Drained
  • 1 whole Serrano Pepper, De-seeded And Diced
  • 1 dash Salt And Pepper, to taste
  • ½ cups Cheddar Cheese

Preparation

Blanch the squash, for about 5 minutes in boiling water. Drain.

Combine the drained can of Ro-Tel and the diced serrano pepper with the squash. Mix well. Add salt and pepper to taste.

Cover with shredded cheddar cheese. Bake for 30 minutes at 400ºF, or until cheese begins to brown.

Absolutely delicious and different! An excellent combination of spicy flavor in a lighter version of a yummy squash side dish. I did substitute fresh jalapenos from our garden for the serrano pepper, with great results. With all the squash coming in this time of year, this was a very welcomed & exciting change in ways to prepare it. I also liked that it was a more healthy option than a typical squash casserole.
