Spiced Cauliflower ‘Couscous’

Description
Serve this cauli ‘couscous’ as a side anywhere you’d normally serve couscous or rice!
Ingredients
- ½ Small Cauliflower
- 4 Tablespoons Butter
- 2 teaspoons Ras El Hanout
- Salt And Pepper, to taste
- Fresh Coriander Leaves, For Garnish (optional)
- Pine Nuts, For Garnish (optional)
Preparation
Whizz cauliflower in food processor until it looks like little grains of couscous.
Melt butter in a large frying pan. Add cauliflower and spices and stir fry over a medium high heat until everything is warm.
Taste and season with lots of salt and pepper. Serve with coriander leaves and pinenuts on top (if using).
