Description

With bathing suit season right around the corner, most of us are trying to cut calories where we can and maybe skip that second chocolate chip cookie (yes, I said second). These mashed potatoes have all the flavor of traditional mashed potatoes without all the calories. Enjoy!

Ingredients

  • 3 whole Yukon Gold Potatoes
  • ¼ cups 1% Milk
  • ¼ cups Fat-free Half-and-half
  • 1 teaspoon Margarine
  • 1 teaspoon Fat Free Sour Cream
  • ½ teaspoons Salt
  • ¼ teaspoons Pepper

Preparation

Cut potatoes into cubes (the smaller the potato the faster it will cook). Bring a medium saucepan to boil and add potatoes. Cook on medium heat for 20–25 minutes.

Drain potatoes and return to the pan. Mash potatoes with a potato masher or fork.

Add milk, half-and-half, margarine, sour cream, salt and pepper. Stir all ingredients together.

So glad to hear that! It does make a small portion so I think adding a few more potatoes is a good call. My husband really liked them too and they are definitely still in our rottion as well!

these were very good! I usually make horrible-for-you potatoes with cream cheese and heavy cream but these were still very good! The portion is very small so i used 5 yukon golds. 1 TBSP margarin and 1 TBSP fat free sour cream. I kept the 1/2 and 1/2 and milk the same. Husband said these could stay in the rotation!
