Description

Just an easy, delicious and authentic rice recipe. Perfect paired with refried beans as an accompaniment to any Mexican meal.

Ingredients

  • 2 cups Long Grain White Rice
  • 3-½ cups Boiling Water
  • 1 cube Chicken Bouillon (I Prefer Knorr Brand)
  • 2 Tablespoons Oil (olive, Vegetable Or Canola)
  • ⅔ cups Chopped Onion (red, White Or Yellow)
  • 1 clove Garlic, Finely Chopped
  • ½ cups Canned Tomato Sauce, Plain Or Spicy (such As El Paso Brand)
  • Salt To Taste
  • Freshly Cracked Black Pepper, To Taste

Preparation

Dissolve bouillon in the heated water.

Heat oil in a medium saucepan over medium-high heat. Add onion and cook until opaque, about 3 to 4 minutes. Add garlic and cook for 1 minute. Add rice and stir until well coated; let cook for 2 to 3 minutes.

Add tomato sauce, boullion/water and salt and pepper to taste. Bring to a boil. Stir well, then cover tightly and reduce heat to low. Simmer for 25 minutes.

Remove from heat and fluff with fork.

Serve and enjoy!

I can’t give this a review due to me changing it so much for what I had on hand! I did not have any bouillon cubes so I left it out, and I did not have any tomato sauce, so I used 2 small cans of tomato paste (the size where it looks like it could belong to a play kitchen supply) but it was still good! :)

I made this rice recipe as a side dish to Ree’s 16 minute beef and bean burritos… delicious! Tasted just like a Mexican joint right down the street that we frequent.

Great recipe, my whole family really enjoyed it. My daughter is vegetarian so I used vegetable broth instead of the water/bouillon but other than that I followed the recipe exactly. Thanks for sharing!

This was very good, and easy! I was pressed for time and seemed to have misplaced my recipe from my husband’s abuela- so I thought I would try this. I used the spicy tomato sauce, and threw in a cut-up serrano pepper for extra heat. My husband approved!

I really liked this recipe! If you are looking for a very very light mexican flavor this is the perfect recipe. I don’t like a lot of spice, but did think this recipe needed a bit more kick. I’ll try the spicy tomato sauce next time. It’s still a winner for those times you need a super mild mexi-rice!
