Peel, core and cut apples into medium chunks.
Put in a saucepan along with water, sugars and cinnamon.
Bring to a boil, then simmer until apples are soft. This should take between 15 and 20 minutes.
Use a potato masher for chunky applesauce (which I do) or a food mill (or maybe a blender or food processor) if you must have it smooth.
Other varieties of apples will work. Just pick the kind that you like to eat raw.
This recipe is very easy to double.
