Description

A healthy vegetable side dish consisting of roast yam with coconut oil, curry leaves, fresh ginger, black lentils, cumin seeds and mustard seeds.

Ingredients

  • ¼ teaspoons Turmeric Powder
  • 7 ounces, weight Yam, Sliced Into Big Pieces;
  • 1 Tablespoon Coconut Oil
  • ½ teaspoons Mustard Seeds
  • 1 Tablespoon Urad Dal Or Black Lentils (optional)
  • ½ teaspoons Cumin Seeds
  • 1 pinch Asafetida Or Hing
  • 2 sprigs Curry Leaves
  • 1  Green Chili, Chopped
  • 1 teaspoon Fresh Ginger, Grated Or Finely Chopped
  • 1 teaspoon Garam Masala
  • ½ teaspoons Salt Or As Per Taste
  • 1 sprig Coriander (Cilantro) Leaves, For Garnish

Preparation

In a pan, boil enough water to submerge the yams and add turmeric powder, salt and sliced yams. Cook yams until soft, about 10 minutes. Drain the water and set cooked yams aside.

In a frying pan over medium heat, add coconut oil. Add mustard seeds, urad dal and cumin seeds. Stir fry until lentils change color to yellow-brown. Add hing, curry leaves, green chilli and fresh ginger. Fry for about 1 minute, then add cooked yams, garam masala and salt. Mix well and fry for few more minutes.

Garnish with fresh coriander leaves and serve as a side dish for grill meat or as a main vegetable dish.
