Description

Shrimp stir fry with scallions and fresh fenugreek leaves. An easy side dish laden with Indian flavors.

Ingredients

  • FOR THE MARINADE:
  • 14 ounces, weight Uncooked Large Shrimp, Cleaned And Deveined
  • ½ teaspoons Turmeric Powder
  • 1 teaspoon Red Chili Powder
  • 1 Tablespoon Fresh Lime Juice
  • ¼ teaspoons Salt

  • FOR THE ASSMEBLY:
  • 3 Tablespoons Oil (Sesame, Olive, Or Any Flavored Oil)
  • 1 clove Fat Garlic Clove, Finely Chopped
  • 1 cup Chopped Scallions, White And Green Scallion Parts, Separated
  • 2 Tablespoons Fresh Ginger Shoot, Finely Chopped
  • 2 whole Green Chilies, Finely Chopped
  • ¼ cups Fresh Or Dried Fenugreek Leaves, Finely Chopped
  • 1 teaspoon Red Chili Powder (adjust To Taste)
  • ½ cups Cilantro, Finely Chopped (or Parsley)
  • ¼ teaspoons Garam Masala
  • 1 Tablespoon Fresh Lemon Juice
  • Salt, Adjust To Taste

Preparation

Marinate the cleaned, uncooked , deveined shrimp with ingredients listed under the “marinade” list for about 15 minutes, refrigerated.

Meanwhile,take a wide-mouthed cooking pan/wok and put it on low heat. Add the oil along with garlic to the pan and let the oil heat up slowly for about 3 minutes. The idea is to flavor the oil with garlic.

Once garlic is crisp, turn up the heat to high and add the white parts of the chopped scallions. Saute for about 1 minute and add the chopped ginger and green chilies.

Next, add the chopped fenugreek leaves, green scallion leaves along with the chili powder. Saute on high heat for about 2 minutes till leaves start to wilt.

Just when about to serve: Add the marinated shrimps (along with the marinade), cilantro leaves and toss on high heat for about 4 minutes, until the shrimp is cooked.Take care not to over cook the shrimp. Check the salt in the dish at this point and adjust. Sprinkle the garam masala at this point.

Squirt fresh lime juice and serve warm with steamed white rice.
